A couple of my favorite recipes using watermelons are Watermelon Mojitos and here is the recipe for my Watermelon Summer Salad:

Ingredients:

3/4 cup halved, thinly sliced onion

1 tablespoon fresh lime juice

1 1/2 quarts seeded, cubed watermelon

3/4 cup crumbled feta cheese

1/2 cup pitted black olive halves

1 cup fresh mint

2 tablespoons olive oil

Directions:

1)  Place the onion slices in a small bowl with the lime juice and let it stand for 10 minutes.

2)  In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with lime juice and mint.  Drizzle olive oil over it and toss to blend.  Enjoy!!

There are many different ways to carve a watermelon for a party. Here are some great ideas like a Cascading Watermelon, a Pool Party, Southwest Salsa Bowl and a Smiling Watermelon.  Be sure to check out my Edible Fruit Arrangements post for some other carving ideas.
