I have learned over the years that I don’t have as much time to prepare food for gatherings so casseroles that you can refrigerate over night are always helpful. My new recipe I tried was Apple Cinnamon French Toast Casserole.
I adapted this recipe from a few different recipes and made it to fit what I wanted. I love trying new recipes but I’m not sure why I always decide to try them when I have company and not try them first but luckily this seemed to be a hit with our guests.
Apple Cinnamon French Toast Casserole
Non-stick cooking spray
16-18 slices of small French bread
2-3 apples thinly sliced (I used the new Sweetie Apples)
4 large eggs
1 3/4 cups milk
1/2 cup sugar
1 1/2 Tbl. cinnamon
1/4 Tsp. ground nutmeg
3 Tbl. butter, cut into small cubes
Coat a 9×9 glass baking dish with non-stick cooking spray. Place the slices of bread in the baking dish.
Whisk the eggs, milk and 1/4 cup of the sugar together. Pour 1/2 of the liquid to coat bread.
Place apple slices on top of bread then pour the remaining liquid over the apples.
Mix remaining sugar, cinnamon and nutmeg together. Sprinkle this mixture over the top of casserole.
Dot with butter.
Cover and refrigerate for at least one hour or overnight. Remove from refrigerator 30 minutes before baking.
Bake, uncovered, at 350° for 1 hour.
You can serve this with butter, syrup or apple cinnamon butter.
